We have matched our unique honey with real cinnamon, premium vanilla pods, lavender sprigs, homegrown rosemary sprigs and Calendula petals. The results are a clear honey with the cinnamon quills, rosemary or lavender suspended in the honey, the gentle floral notes of gourmet quality vanilla grown and cured in the ideal climate of the Ruwenzori Mountains of Uganda or Calendula petals. Add the vanilla honey to sweet and savoury dishes and recipes. Perfect with fresh fruit or drizzled over ice cream and Greek yoghurt. The cinnamon honey is infused with true cinnamon sticks from Sri Lanka and is a versatile infusion for sweet and savoury recipes. Or simply mix into warm tea or drizzle on toast or fruit and yoghurt. Lavender in particular is well-known for it’s stress-relieving, sleep enhancing properties, making this particular honey perfect for unwinding at the end of a long day. Rosemary honey is particularly good to use on damaged skin, it can help soothe eczema and rashes and may help in reducing acne and blemishes and is often used for skin care – face masks for instance. Throughout history it has been held in high regard. The Rosemary used to infuse the honey is grown outside the Bee Academy at Newbattle and air dried before it is added to the honey. The Calendula petal honey is known to be wound-healing, anti-inflammatory, and antioxidant properties The Walnut infusion has crisp creamy Walnuts added. It is delicious with Yoghurt.
